Broccoli Salad

6 cups chopped broccoli (blanced slightly)
1 small red onion (thinly sliced)
2 oz. shredded extra sharp cheddar cheese
2/3 cup raisins
1 ½ oz. dry roasted peanuts
6 slices bacon (cooked and crumbled)

Dressing
2 TBSP. mayonnaise
½ cup fat free plain yogurt
¼ cup sugar
1 TBSP. plus 2 tsp. red wine vinegar

In a large glass serving bowl, layer all salad ingredients except bacon.  Pour dressing over salad.  Cover and chill until ready to serve.  Toss on bacon just before serving.

Mom’s Coleslaw
1 head of cabbage
3 apples cut into bite sized pieces
½ cup of mayonnaise
3 Tablespoons of apple cider vinegar
½ cup sugar
¼  tsp. pepper


Cut the cabbage into ¼’s, then chop each section into fine pieces. Place in large serving bowl. Stir in the apple pieces. Mix the next four ingredients until smooth to make the dressing and pour over cabbage. If the slaw is not moist enough, you can make more dressing the same way.

Mom’s Potato Salad

10 hard boiled eggs
10 peeled, boiled potatoes
1- 1 ½ cup Best Foods Mayonaise (Hellman’s on east coast)
Approx. 1/8 cup finely chopped onion (or to taste)
Salt and pepper to taste

Boil potatoes and eggs.  Cut potatoes into small bite-sized pieces and put in large bowl.  Peel and cut eggs into small bite-sized pieces. Add to potatoes.  Mix in mayonnaise, onion and salt and pepper.  Chill several hours or overnight before serving.

Cranberry Jello Salad
1 can small crushed pineapple
1 can whole cranberry sauce
1 Tablespoon orange juice concentrate
1 – 6 oz. pkg. raspberry jello
1 ¼ cup boiling water
1 cup chopped walnuts
¾ cup 7-up
1 cup sour cream
2 – 3 oz. packages cream cheese mixed w/1-2 Tbs. sugar


Dissolve jello in water.  Stir in cranberry sauce and add everything except sour cream and cream cheese.  Let set in refrigerator.  Mix sour cream and cream cheese.

Chicken With Fruit Salad

****Marinate 3 cups diced cooked chicken breasts in: 2 Tbsp. oil, 2 Tbsp. orange juice, 2 Tbsp. vinegar, & 1 tsp. salt, overnight.

Add & Combine:


1 c. drained mandarin oranges
1 c. pineapple tidbits
1 c. seedless white grapes
1 c. toasted almonds slices
1 c. chopped celery
1 c. mayonnaise
Serve on a bed of lettuce or in croissants.
