German Pancakes
Preheat oven to
400 degrees
Mix with
beaters:
6 or 7 eggs
1 ½ cups of
flour
1 ¾ cups of milk
¾ tsp. salt
2 tablespoons
butter
Cook in 9x13”
pan for 30 minutes.

Fluffy Pancakes
¾ cup of milk
2 tablespoons
white vinegar
1 cup
all-purpose flour
2 tablespoons
white sugar
1 tsp. baking
powder
½ tsp. baking
soda
½ tsp. salt
1 egg
2 tablespoons
butter, melted
Cooking spray
Combine milk
with vinegar in a medium bowl and set aside for 5 mins. to “sour”, Combine
flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk
egg and butter into “soured” milk (home-made buttermilk). Pour the flour
mixture into the wet ingredients and whisk until lumps are gone. Heat a large
skillet and cook on each side until done.

Home made Bisquick Baking Mix
9 cups
all-purpose flour
¼ cup baking
powder
1 tablespoon
salt
2 cups
shortening
In a large bowl,
combine the dry ingredients. Cut in shortening (with a fork or pastry blender)
until the mixture resembles coarse crumbs. Store in an airtight container in a
cool dry place or in the freezer for up to 8 months.

Pancakes:
1 cup milk
2 eggs
2 cups of Baking
Mix
Stir milk and
eggs until blended. Stir into Baking Mix. Do not overstir. Pour small cupfuls
onto griddle or pan.
Dumplings:
2 cups Baking
Mix
2/3 cup milk
Stir ingredients
until soft dough forms. Drop by spoonfuls onto boiling stew (chicken broth,
with pieces of chicken, carrots, celery,onions, spices, etc.). Reduce heat.
Cook uncovered 10 mins., cover and cook 10 mins more.
Biscuits:
2 ¼ cups Baking
Mix
2/3 cup milk
Heat oven to 450
degrees. Stir ingredients until soft dough forms. Turn onto surface generously
sprinkled with Baking Mix. Knead 10 times. Roll ½” tick. Cut with large
cup/glass. Place on ungreased cookie sheet. Bake 8-10 minutes or until golden
brown.

Bethie’s French Toast Syrup
½ cup butter
½ cup buttermilk
1 ½ cups sugar
2 tsp. vanilla
1/2 – 1 tsp.
baking soda
Mix first three
ingredients in a large saucepan (size will double) and let boil till thickened
(around 10 minutes). Take off heat and add vanilla and baking soda.

Banana Streusel Muffins
2 cups
all-purpose flour
1 cup sugar
1 tsp. baking
powder
½ tsp. salt
½ tsp. baking
soda
¼ tsp. ground
cinnamon
2 eggs
1 cup sour cream
¼ cup butter,
melted
2 medium ripe
bananas, mashed
Streusel
topping:
¼ cup sugar
3 tablespoons
all-purpose flour
¼ tsp. ground
cinnamon
2 tablespoons
butter or margarine
In a large bowl,
combine the flour, sugar, baking powder, salt, baking soda and cinnamon. In a
small bowl, beat eggs, sour cream, butter and bananas; stir into dry
ingredients just until moistened. Filled greased muffin cups three-fourths
full. For streusel, combine sugar, flour and cinnamon in a small bowl; cut in
butter. Sprinkle over muffins. Bake at 375 degrees for 20-25 mins. Makes 12
muffins
